The hypothalamus

The hypothalamus is your body's thermostat. It also regulates food and water levels and, to some extent, controls emotional behavior. When you are cold, the nerves that monitor temperature send messages to the brain. ("Hey, it's getting cold down here.") The hypothalamus acts immediately, sending a return message to the nerves in the muscles. What happens? Your muscles, answering the call, begin to shiver in an attempt to raise your body temperature back up to normal.

A similar thing happens when you are confronted by danger. The hypothalamus signals the adrenal glands to release adrenaline into the blood stream. This speeds up the heart rate and blood pressure to help you respond in an emergency.
